Vegan Gnocchi Sauce with Roasted Tomatoes

I find when making food, it’s all about sauces. Just think of pasta without sauce. Meh. But with something like this  Spicy Tahini Pasta Sauce, it is incredibly delicious.

Today’s recipe is following the same direction. Once you’ve tried this Vegan Gnocchi Sauce with Roasted Tomatoes you know it’s super satisfying, creamy, addictive, mouthwatering, time saving, homemade, garlicky, cheesy, and the ultimate comfort food for everyone.

For me the best part about it is that it is not only an amazing gnocchi sauce recipe but also perfect as spaghetti sauce. It’s a keeper for everyone who loves a bit variety from your vegan Alfredo sauce.

How to make Vegan Gnocchi Sauce with Roasted Tomatoes

Start with parchment paper on a baking sheet. Lay down your halved cherry tomatoes and season them with a pinch of salt and pepper. Roast them for around 20 minutes at 415°F.

When your oven roasted tomatoes have reached the 10 minute mark, it’s time to get going and make the gnocchi white sauce. Start by melting the vegan butter in a casserole.

Add minced garlic to the butter and fry for around 2 minutes. Slowly add the half of the almond milk, and mix 2 tsp potato starch with 8 tsp water.

Carefully pour the mix into the sauce and bring to a slow boil while whisking. When it starts to thicken, add the rest of the almond milk. Keep whisking for about 4 minutes.

Next and last, add the optional nutritional yeast and season with salt and pepper. Cook for 2 additional minutes.

Serve over gnocchi or pasta with the gnocchi sauce and roasted tomatoes.

Is gnocchi pasta

Short answer: no. But still, gnocchi are delicious and amazing. You can imagine when making potato gnocchi which the main ingredient is obviously potatoes, that it has a fantastic and robust texture from the starch of potatoes.

You finally add some flour to make the texture complete. It all depends on your preferences:

Store bought gnocchi are no different, meaning that the main ingredient is potatoes. But let’s no lie: homemade taste so much better.
